Swordfish
A flavor so rich and addictive, you'll want more after just one bite
Our dedication to Swordfish
The swordfish, nurtured in the miraculous sea,
melts tenderly on your tongue
The Sanriku sea, one of Japan’s premier fishing grounds, is known as the miraculous sea for its abundance of fish.
The large, fatty swordfish, nurtured in such seas, is a well-known specialty of the Sanriku region.
The melting flavor on the tongue is sure to bring a smile to your face.
The centerpiece of the Oofunato Onsen’s cuisine
‘Swordfish Helmet Simmer’.
This ‘Helmet Simmer’, made by slowly stewing the entire head of the swordfish in a large pot, is a signature dish of our establishment.
When serving the dish, we bring the helmet simmer to your table and portion it out right before your eyes.
Due to its deliciousness and impact, it has been featured extensively in media such as television.
Simmered slowly for three days,
the tender meat is rich in flavor.
The flesh, stewed for three days in a secret broth, becomes so tender that it falls apart at the touch of chopsticks.
The rich and concentrated flavor of the swordfish is exceptionally well-matched with white rice.
With just one bite, you’ll certainly crave more of this signature dish of our establishment.
